Charles M. Russell, the iconic Western illustrator, created an image depicting The Evolution of Range Beef. The artwork showcased three animals: the Buffalo (1743–1832), the Longhorn (1832–1875), and the Whiteface (1875–1925). Russell passed away in 1926, so the Whiteface date extended up until that time. Today, we know the evolution has continued, including other species such as the Black Angus. Nonetheless, as a tribute to the undoubtedly greatest Western artist that ever lived, I present Longhorn.
